Mama's Favorite Meat Sauce


It has taken me forever to get this blog post up. Between 2 proms, lacrosse games and practices, nice weather and getting things done outside, I'm afraid this has fallen to the way side. But nonetheless here it is!

Who doesn't love a good meat sauce? This meat sauce is a favorite, a staple and requested often in our house. Many times I hear people say "I'll just have the meat sauce for lunch or dinner, because it eats like a meal!" This meat sauce is kind of similar to a dump cake. Dumping lots of things together, but made with good wholesome ingredients. Let it simmer for 20 minutes or longer if you would like to meld the flavors. This meat sauce is great for lots of uses. We use it over spiralized zucchini or sweet potato noodles, or over regular gluten-free noodles. You can use it over any kind of mashed vegetable or you can omit the ground meat in the recipe and use meatballs in it instead. This would be great in a lasagna with butternut squash in place of noodles. Or how about giving it a try in eggplant Parmesan?

This recipe is not AIP friendly, as it has night shades in it. However, I have been able to successfully add night shades back into my diet. Thank the good Lord because this meat sauce, I don't know if I could live without! You know you have a keeper when people come home take a big sniff of the air and say "Yes meat sauce for dinner!" It's thick, it's meaty, it's flavorful, full of color and absolutely filled to the brim with nutritious vitamins and minerals and protein.
